Ingredients

  • 3 tbsp almonds (roasted)
  • 1 lb Swiss chard (blanched)
  • 1 large shallot (thinly sliced)
  • 1 tsp lemon zest (finely grated)
  • 2 tbsp fresh lemon juice
  • 1 tbsp white wine vinegar
  • ½ tsp cumin seeds (crushed)
  • 4 tbsp extra virgin olive oil
  • 6 Medjool dates (pitted and coarsely chopped)
  • 1/3 cup kalamata olives (pitted and coarsely chopped)

Directions

  1. To make the dressing, combine shallot, lemon zest, lemon juice, vinegar, and cumin seeds. Season vinaigrette with salt.

  2. Squeeze out liquid from blanched chard. Separate leaves and add to vinaigrette along with dates and olives; toss well. Top with olives & dates.
